比较了乙二胺四乙酸铁钠(NaFeEDTA)强化酱油、硫酸亚铁(FeSO_4)强化酱油中铁在人体中的吸收率,结果NaFeEDTA中铁的吸收率为10.51%。是FeSO_4的2.2倍;贫血儿童的贫血改善效果提示,NaFeEDTA组的贫血改善率和Hb恢复水平优于FeSO_4组;NaFeEDTA强化酱油人群干预试验结果证明,NaFeEDTA强化酱油对于纠正铁缺乏、降低缺铁性贫血率有明显效果。
The absorption rate of iron in human body by NaFeEDTA fortified soy sauce and ferrous sulfate (FeSO 4) fortified soy sauce was compared.
