以温、肥为生态因子设置了塑料大棚覆盖施有机肥区和施无机肥区 ,裸地施有机肥区和施无机肥区 4个处理 ,研究了对茶鲜叶β 葡萄糖苷酶活性及醇系香气含量的影响。结果表明 ,施有机肥和大棚覆盖均利于增强 β 葡萄糖苷酶活性 ;结合态醇系香气含量与醇系香气总量对生态因子的反应具协同性。结合态香气是醇系香气的主要来源。覆盖施有机肥与其他 3个处理比较 ,可明显提高茶鲜叶中游离态醇系香气含量、结合态醇系香气含量及醇系香气总量 ,并均随采摘时间进程呈单峰曲线变化。可见温、肥对茶鲜叶 β 葡萄糖苷酶活性、游离态醇系香气含量、结合态醇系香气含量及醇系香气总量均有一定影响 ,其中 ,覆盖施有机肥区能明显增强释放结合态醇系香气的主要酶类β 葡萄糖苷酶的活性 ,从而提高茶叶的香气。表1图 3参 6
