我们在工作中曾遇到几例变味的生晒参,其外观形状及断面纹理与优质品基本无差异,但嗅之没有生晒参的特异香气。其中有的表面色白,但嗅之却有硫磺的酸气,尝之味酸,有刺喉感;有的参表皮有明显缺损,象是刮去霉点后留下的痕迹,味淡,无甘味,香气甚微。另有一种表面色白,断面灰暗,尝之无参味,霉气重。这几例生晒参无疑是变了质的参,不可再使用。造成上述生晒参变质的原因,笔者认为有以下几方面:
