在簿层层析法确定氨熏蒸可降解稻谷中黄曲霉毒素 B_1的基础上,按我国现行的《食品安全性毒理学评价程序》,对经氨熏蒸后的稻谷(或加工成的大米)的卫生品质进行了评价。按规定完成了评价的第一阶段(急性毒性与七日喂养试验)、第二阶段(致畸、致突变的三个试验)及第三阶段(亚慢性毒性)试验。全部结果证实,氨熏蒸可有效地降解稻谷中黄曲霉毒素B_1,并且未发现其降解物对实验动物有毒性。此去毒法可在有关部门试用。
On the basis of determining the aflatoxin B1 in ammonia fumigation and rice by book chromatography, according to the current “Food Safety Toxicology Evaluation Procedure” in our country, the effect of ammonia fumigation on rice (or processed rice) Health quality was evaluated. The first phase of the evaluation (acute toxicity and seven-day feeding trial), the second phase (three trials for teratogenicity and mutagenesis) and the third phase (sub-chronic toxicity) were completed as required. All the results confirmed that ammonia fumigation can effectively degrade aflatoxin B 1 in rice, and no degradation products were found to be toxic to experimental animals. This detoxification method can be tried in the relevant departments.
