柿子属柿树科,原产于我国,栽培历史悠久,在我国各地分布广泛,并有相当大的种植面积,在我国水果产量中,柿排列第四位。柿果色泽鲜艳,风味独特,营养丰富,是人们喜食水果乏一。柿果具有很高的经济价值和药用价值,每100g鲜果中含糖及淀粉12~18g,蛋白质1.2g,脂肪0.2g,维生素A450国际单位,维生素C30mg,以及磷、铁、钙等其它矿质元素。柿子在树上着生期长,成熟集中,采后短期内极易软化伤烂,给贮藏、加工,运销等带来很大困难。为了较好的解决柿子贮藏、运输过程中的保鲜问题,本文总结了常用的柿子贮藏保鲜技术,以期给果农、商业贮运销部门、果品加工工业带来较好的经济效益。
Persimmon is a persimmon family, native to China and has a long history of cultivation. It is widely distributed throughout China and has a considerable planting area. In the fruit production of China, persimmons rank the fourth place. Persimmon bright color, unique flavor, nutrient-rich, people eat fruit lack one. Persimmon has very high economic value and medicinal value. Each 100g fresh fruit contains 12-18g sugars and starch, 1.2g protein, 0.2g fat, vitamin A450 international unit, vitamin C30mg, and other minerals such as phosphorus, iron and calcium element. Persimmon in the tree with a long life, mature and concentrated, easy to soften the injury shortly after harvest, to the storage, processing, transportation and other great difficulties. In order to solve the persimmon storage and transportation problems during storage, this paper summarizes the commonly used technology of persimmon storage and preservation in order to bring better economic benefits to the farmers, commercial storage and sales department, fruit processing industry.
