食物的理化性质可以通过胃窦而影响胃液的分泌,这在过去已积累了很多资料。但是,系统地、定量地研究各种食物及其化学成分对胃窦的影响的资料尚嫌不足,并且还存在一定的分歧意见;而结合我国人的膳食特点进行研究所获得的资料则更少。前人在胃液分泌胃期的研究中,常把胃窦以及作为胃液分泌指示器官的各种小胃永久地从消化道隔离开,不能与其正常生理刺激
