Biphase change atmosphere is a new technology and theory of apple atmosphere storage.This paper introduces the main difference between the two-phase change atmosphere and the traditional atmosphere, as well as the results of the test under strict contrast conditions. Red Star apple 150 days, the fruit quality and pulp hardness is better than cold storage, and the atmosphere is basically the same library, and can significantly inhibit the original pectin hydrolysis, ethylene biosynthesis and MACC accumulation.
