台湾地区的饮食,其实多遵循中国古法,中规中矩。台湾饮食,中规中矩,多遵循中国古法,只不过大多数人但知其然,而不知其所以然,不免穿凿附会,失去台湾饮食的本来面目。我们且以两味最普通的台湾小吃“卤肉饭”与“四神汤”为证。卤肉饭最近因为法国米其林公司的一篇介绍,又吹皱一池春水,有人认为“卤”者“鲁”也,应当来自山东;有人认为“卤”为咸味,农民所嗜,该是地道台湾小吃,其实皆大谬不然。
