多酚所具有的保健作用逐渐被人们所认识,含有丰富多酚类化合物的野樱莓(Aroniamelanocarpa)也逐渐受到关注。高效提取野樱莓中总多酚是其高值化利用的重要途径。本文对比研究了利用酸性乙醇、乙醇和纯水3种提取剂对野樱莓中总多酚的提取效果。结果表明,酸性乙醇具有最高的多酚提取率,而以纯水作为提取剂其多酚提取量只有酸性乙醇的2877%。对多酚抗氧化活性(去除DPPH自由基的能力)研究发现,水提多酚的抗氧化活性高于乙醇和酸性乙醇提取的多酚。酸性乙醇、乙醇和水提取的多酚去除DPPH自由基的VC当量比值为100∶7610∶7083。将3种提取液减压浓缩至原体积的10%后,多酚的抗氧化活性几乎不损失,但是3种浓缩液在冷冻干燥后,只有水提多酚可以完全复溶。综合考虑成本、安全等因素,水作为野樱莓多酚的提取剂具有一定优势。
The health benefits of polyphenols are gradually recognized. Aronia melanocarpa, rich in polyphenols, has also drawn increasing attention. Extracting total polyphenols from wild cherry berries is an important way of high value utilization. In this paper, we compared the extraction of total polyphenols from wild cherry fruit with three kinds of extractants, acidic ethanol, ethanol and pure water. The results showed that acidic ethanol had the highest rate of extraction of polyphenols, while pure water as extractant had only 2877% of the total amount of acidic ethanol extracted. The antioxidant activity of polyphenols (the ability to remove DPPH free radicals) study found that the water-extracted polyphenols higher antioxidant activity than ethanol and acidic ethanol extracted polyphenols. The VC equivalent ratio of DPPH radical extracted by acidic ethanol, ethanol and water extracted polyphenols was 100: 7610: 7083. The three extracts were concentrated under reduced pressure to 10% of the original volume, the antioxidant activity of polyphenols almost no loss, but the three concentrates after freeze-drying, water only polyphenols can be fully reconstituted. Considering cost, safety and other factors, water has certain advantages as extractant of wild cherry berry polyphenols.
