鱼叶是由茶子萌发到茶树幼苗形成过程中、或由生长芽伸育成为新梢过程中所出现的变态叶之一。鱼叶是计算茶树新梢着叶数和采摘留叶数的起点,留鱼叶采也是留叶的最低限度。茶叶采收过程中留不留鱼叶采,对茶叶产量、品质有很大的影响。在我国的许多古书中都有过记述,如《水观茶论》(公元1107~1110年)中说:“茶之始芽萌则有百合,既撷则有乌带,百合不去害茶味,乌带不去害茶色。”所谓“百合”“乌带”即为鳞片和鱼叶,采茶时如果将新梢上的鱼叶、鳞片一齐采下,就会影响茶叶的滋味和色泽,使制成品之品质大减,也有害于往后产量的增长。
