[目的]为了解生肉类食品的安全性,针对火锅城食用生肉类食品中的单核细胞增生性李斯特菌及金黄色葡萄球菌进行检测。[方法]按照GB4789.30-2008、GB4789.10-2008对相关菌株进行检测。[结果]从1例火锅食用冷藏猪脑中同时分离出2种致病菌,单核细胞增生性李斯特菌(简称100105A)及金黄色葡萄球菌(简称100105B)。并对菌株100105A、100105B其形态特征、生理生化鉴定以及对菌株100105A进行了16S rDNA序列进行了分析,确定了其系统发育关系,并研究了100105A菌株在10℃,4℃,-10℃低温下的生长情况。该菌株在10℃,4℃,乃至-10℃下,显示出较强的繁殖能力。[结论]冰箱冷藏保存,对食品安全性也存在一定风险。
[Objective] In order to understand the safety of raw meat products, Listeria monocytogenes and Staphylococcus aureus were tested in raw meat foodstuffs in hot pot city. [Method] The related strains were tested according to GB4789.30-2008 and GB4789.10-2008. [Result] Two kinds of pathogenic bacteria, Listeria monocytogenes (abbreviated as 100105A) and Staphylococcus aureus (abbreviated as 100105B) were isolated from the brain of a hot pot for food refrigeration. The morphological characteristics, physiological and biochemical identification of strain 100105A and 100105B and the analysis of 16S rDNA sequence of strain 100105A were carried out. The phylogenetic relationships among strains 100105A and 100105A were studied at 10 ℃, 4 ℃ and -10 ℃ The growth of the situation. The strain showed strong reproductive ability at 10 ° C, 4 ° C and even -10 ° C. [Conclusion] The refrigerated refrigerator has certain risks to the safety of food.
