The recent stinging of seven staphylococcal food poisoning associated with canned mushrooms in the United States prompted many states to withdraw the can, and the U.S. Food and Drug Administration (FDA) ordered the cessation of the import of large-format canned mushrooms from a country. In this article, three of them are briefly described. Two occurred in February 1989 and one occurred in April. Twenty-two people at a university cafeteria in Starkville, Mississippi, developed gastroenteritis hours after eating. Symptoms were nausea, vomiting, diarrhea and abdominal pain, 9 were hospitalized. The survey found that canned mushrooms supplied with omelets and hamburger steaks were associated with the onset of disease, and no problems were found in the cooking and handling of the food. Staphylococcal enterotoxins are detected from canned mushrooms taken from omelettes and canned mushrooms from the same batch. Forty-eight staff restaurants at Queens 1 Hospital in New York City developed about 3 hours after lunch, and 1 of them was hospitalized. Epidemiological investigation confirmed
