中式面点实践技能操作课是中点专业课程的重要组成部分。中式面点技能操作课的教学质量高低直接影响学生的实际操作能力,因此必须强化学生的技能训练,把规范的实际操作技能训练作为主要的教学内容来抓。但目前实操课的教学存在许多不足,经过多年教学总结,笔者认为要从教学方法上进行改变:改变单一教学方式,采用分阶段教学法,运用多种方法手段,来强化学生的操作技能水平,提升课堂教学质量,充分提高学生学习潜能,使之达到形成高效、明确的教学目标。
Chinese noodle practice skills class is an important part of mid-point professional courses.
