危害分析关键控制环节(HACCP)是国际上一种先进的食品卫生管理方法。我国未见系统应用报道,我们采用HACCP的方法对运动员餐厅进行监督管理,并获得成功。现报告如下:1 运动员餐厅供餐特点1.1 食谱丰富。每餐11大类.近100个品种,主菜7天不重样。1.2 就餐人数多、供应量大,平均每天近500人进餐。1.3 自助餐形式供餐,24h服务,食品摆放时间长。1.4 厨师劳动强度大,是平时的3倍。
Hazard Analysis Critical Control Link (HACCP) is an internationally advanced method of food hygiene management. There is no systematic application report in our country. We adopted the method of HACCP to supervise and manage the athlete’s restaurant, and achieved success. The report is as follows: 1 athlete restaurant dining features 1.1 recipes rich.
