聚酯型儿茶素(Theasinensins,TSs)和茶黄素(Theaflavins,TFs)是儿茶素在酶促作用下形成的两类重要的氧化产物,具有丰富的药理功能。本文通过酶促氧化儿茶素单体和茶鲜叶悬浮发酵的试验方式,控制不同反应因素和条件,生成TSs和TFs,依据液相定量方法,得出如下结果:酶促氧化EGCG形成脱氢聚酯型儿茶素A(Dehydrotheasinensin A,DTSA)和聚酯型儿茶素A(
