  High Pressure Processing technology (also knows as HPP,or UHP,or HHP) well known at laboratory level since one century,became industrial and started to be implemented consistently by food industries worldwide in the XXI century thanks to critical advances in design and materials.HPP is nowadays the only emerging,non-thermal processing technique for foods increasingly being adopted by food organisations who,following the trends in the global markets,need minimally processed,more natural,fresher appealing,higher value added products.It is recognised as a useful tool for innovation,RandD,market expansion and substitution of traditional processing methods.
