Whey soy proteins is obtained from the soluble fraction separated in the isoelectric precipitation of the major components of native soy isolate,the 7S and llS fractions.According to analyzing WSP and comparing function and properties between whey and isolate soybean proteins,content and proportion of amino acid of WSP are uniform,average molecular weight or WSP is 27.5KD,and WSP has better emulsion stabilizing properties,foaming capacity,digest index and anti-oxidation character,same emulsification and lower or worse sticky grade,solubility,gel grade and holding water capability.
