  The utilization of carrot pomace can reduce environmental pollution and resources waste.Carrot pomace sourced dietary fiber is abundant and economical.Dietary fiber has the abilities of prevention of obesity,auxiliary hypoglycemic and so on.The high quality dietary fiber with good physicochemical and functional properties was obtained by modifying the natural extracted dietary fiber.In this study,insoluble dietary fiber was isolated from carrot pomace using ultrasound assisted enzymatic-chemical method.High hydrostatic pressure method from 300MPa to 600MPa was used to obtain modified dietary fibers.Then the microstructure,physicochemical properties and function of modified dietary fibers were investigated.Furthermore,the modified dietary fibers were added to cookies,and the influence on hardness and brittleness was studied.
