Dextran, synthesized by dextransucrase under the transfer of D-glucosyl unit from sucrose to acceptor moleculars, is an extracellular bacterial polymer of D-glucopyranose.It has a substantial number of α (1,6) linkage in main chain and a variable amount of α (1,2), α (1,3), α (1,4) branched linkages.Up to date, it has already been widely applied in pharmaceutical, food and chemical industries.
