Modem epidemiological studies have demonstrated that Angiotensin Ⅰ-converting enzyme (ACE) plays an important role in the renin-angiotensin-aldosterone system.Some synthetic ACE inhibitors are often used as medicine against hypertension, but they can cause serious side effects.In order to overcome these problems, researchers are keen on searching for natural ACE inhibitors as alternatives to synthetic ones.So far, many natural ACE inhibitory peptides were isolated from the hydrolysis of various proteins.
