本试验旨在探讨不同能量水平饲粮对锦江牛生产性能和肉品质的影响.试验选用50头初始体重为301.7 ±30.1 kg的锦江去势公牛,随机分为五组,分别饲喂A、B、C、D、E五种饲粮,每个处理组10头牛,每个处理组分为4个重复,每个重复2-3头牛.从A到E,五种饲粮的综合净能(NEmf)依次为6.16、6.51、6.83、7.18、7.61 MJ/kg,粗蛋白水平一致.饲喂116天后,禁饲12h,每个

本试验旨在探讨不同能量水平饲粮对锦江牛生产性能和肉品质的影响.试验选用50头初始体重为301.7 ±30.1 kg的锦江去势公牛,随机分为五组,分别饲喂A、B、C、D、E五种饲粮,每个处理组10头牛,每个处理组分为4个重复,每个重复2-3头牛.从A到E,五种饲粮的综合净能(NEmf)依次为6.16、6.51、6.83、7.18、7.61 MJ/kg,粗蛋白水平一致.饲喂116天后,禁饲12h,每个处理从不同的牛栏中选择体重接近于处理组平均体重的3头牛屠宰采样.结果表明:随着饲粮NEmf水平的提高,锦江牛日增重(ADG)逐渐提高,干物质采食量(DMI)逐渐下降,料重比显著下降(P<0.05).对于肉品质,随着饲粮NEmf水平的上升,背最长肌pH45min值及剪切力显著下降(P<0.05).但饲粮处理对背最长肌pH24h值、肉色(L*,a*,b*)、滴水损失和蒸煮损失均无显著影响.随着饲粮NEmf水平的提高,饲粮干物质(DM)和有机物(OM)的表观消化率逐渐增加,其中E组的DM表观消化率最高(81.97%),D组的OM表观消化率最高(84.34%).随着饲粮NEmf水平的提高,总能消化率和代谢率呈先增加后降低的趋势,其中C组的总能消化率(86.94%)和代谢率(71.29%)最高.不同体重和日增重锦江牛的消化能、代谢能需要量的回归方程分别为DE = 0.779W0.75+23.174 × ADG;ME = 0.655W0.75 + 19.010 × ADG.锦江牛维持消化能和代谢能需要量分别为0.779、0.655 MJ/kgW0.75.d-1,每千克增重的消化能和代谢能需要量分别为23.174、19.010 MJ.在本试验中,饲粮E能量水平条件下,锦江牛日增重最高、嫩度最好,但与饲粮C数值上差异不大,且饲粮C能量水平条件下锦江牛能量消化率和代谢率最高,综合考虑,饲粮C能量水平(NEmf = 6.83MJ/kg)比较适宜促进锦江牛生长并提高其肉品质.
