Soybean is a main agriculture product in China and has been used to provide oil and protein (tofu) since ancient times.Soybean oil and protein content account for nearly 60% of dry soybeans by weight (protein at 40% and oil at 20%).The remainder consists of 35% carbohydrate and about 5% ash.Soybean protein has been available since 1936 for its functional properties.Soy protein is isolated from soybean and it is produced from soybean meal that has been dehulled and defatted.
