The quality of wine distillate depends on many factors, e.g.grape cultivars, harvesting time, quality of grape cider, activity of yeasts, fermentation, used distillation technology, quality and type of wooden barrels, etc.These factors influence both, aroma and taste, which means qualitative and quantitative composition of present organic compounds.The final taste of wine distillates is usually combination of ethanol, water and characteristic organic compounds senses.They are mostly linear and branched alcohols, carboxylic acids and their esters, diols, aldehydes etc.
