Tannin is a secondary plant metabolite that reacts with forage protein to form tannin-protein complexes which are stable at pH 6-7 and resistant to rumen degradation.This complex then disassociates in the abomasum (pH＜ 3.5) facilitating protein digestion in the small intestine and potentially increasing undegradable protein supply.
