Garlic (Allium sativum L.) is known to possess a vast variety of culinary and biological functions.Garlic polysaccharide (GP) is a newly found functional factor.This study investigated the applicable functionalities of GP,such as solubility,oil absorbability,foam ability,moisture absorption and retention etc.Results showed that GP was soluble in water,slight soluble in ethanol but insoluble in acetone,ethyl acetate or butanol.The precipitation increased as the concentration of alcohol rise.
