滑菇富锌培养及其多糖抗氧化活性的研究

  通过滑菇菌丝体液体深层培养和子实体栽培获得富锌滑菇多糖.一定浓度的锌离子能促进滑菇菌丝体生长,提高滑菇子实体产量,并对杂菌污染有一定的抑制作用.通过抑制羟自由基(·OH)的产生、清除DPPH自由基和超氧阴离子(O2-·)研究滑菇富锌多糖的抗氧化活性,用Vc作为对照.富锌滑菇多糖对自由基的清除能力和多糖浓度呈现出明显的剂量-效应关系.富锌子实体多糖对·OH、O2-·和DPPH自由基的半数抑制浓度(Ec50)分别为0.56 mg/ml、0.69 mg/ml和0.62 mg/ml.对应的子实体多糖的半数抑制浓度(Ec50)分别为0.70 mg/ml、0.72 mg/ml和0.93mg/ml.富锌菌丝体多糖对·OH、O2-·和DPPH自由基的半数抑制浓度(Ec50)分别为0.49 mg/ml、0.58 mg/ml和0.60 mg/ml.对应的菌丝体多糖的半数抑制浓度(Ec50)分别为0.71 mg/ml、0.75 mg/ml和0.92 mg/ml.Vc对·OH、O2-·和DPPH自由基的半数抑制浓度(Ec50)分别为0.41 mg/ml、0.45 mg/ml和0.41 mg/ml.富锌滑菇多糖具有更强的抗氧化作用.
