江苏省灌南县地处经济相对落后的苏北地区，属于生猪出栏大县，畜牧养殖仍然是百姓经济收入的重要来源之一。我们常说“三分市场、七分养”而养殖成功的关键就在于疫病的控制。国家大政方针是积极鼓励和支持畜禽养殖的大型规模化发展，大型规模场的防疫工作是自防，基本不需要村级防疫人员的参与，然而我国中小规模养殖户、散养户大量存在的现状在短期很难转变，所以村级动物防疫员还是动物疫病防控体系的重要基础。
乳酸菌具有抑制细菌的生长、调节机体胃肠道正常菌群、提高营养物质的吸收率、促进机体的免疫功能、预防以及治疗疾病等功能，并能在畜牧生产中发挥重要作用。本文主要对乳酸菌的理化特性、益生功能以及在畜牧生产中的应用进行综述，并对乳酸菌的发展前景进行展望。
