Canna edulis Ker starch,grown in China,was subject to heat-moisture treatment (HMT) at moisture levels ranging from 18 % to 27 % and its physicochemical properties were investigated.HMT did not change starch granule size and shape,and all starches showed birefringence under polarized light microscope.Amylose content,swelling power,solubility as well as water and oil absorption in native starch were higher than in all modified starches.However,alkaline water retention and acid susceptibility of native starch were lower compared with those obtained for all modified starches,along with different extent of amylose leaching.
