Furan has recently received considerable attention as a possibly carcinogenic compound occurring in thermally processed foods.Relatively high amounts of furan have been detected in strongly heated foods.In canned and jarred foods, furan in baby foods causes the highest concern, since the contribution to a babys diet might be very extensive.Exposure estimates for adults indicate coffee as the major source of furan in the adult diet.Experiments in rats and mice showed that furan is absorbed quickly into the body and accumulates in the liver and kidneys.Absorbed furan is metabolized rapidly by cytochrome P-450 enzymes to form cis-butene-1,4-dial, which binds to proteins and nucleosides.
