In this paper,three kinds of fen-type Daqu produced by Fen liquor factory,Shanxi,were used as samples.Through physicochemical and biochemical analysis,the methods applied for the traditional Daqu quality indexes analysis (including water content,acidity,starch content,maltogenic amylase activity,amylase activity and fermentation ability),some new proposed indexes analysis (including volume weight,alcohol-producing ability,esterifying ability and flavor-producing ability),as well as some other indexes (including proteinase activity,cellulose activity and lipase activity) would be referred in Daqu Quality Standard were evaluated.At the same time,these data can be supplied for light-flavor Daqu Quality Standard establishment.
