The use of antibodies in the speciation of meat and feed products has progressed from crude identification to targeted detection of specific organs and tissues, all designed to aid in regulating the sale, import and export of animal products and byproducts.Test kits based on polyclonal antibodies to lean skeletal muscle are still the primary tools of the USDA and other regulatory agencies, and are highly sensitive and specific for detecting adulteration.
