Fat of foods includes about 95 percents of Triacylglycerol,the fatty acids esterified in which varies with their Stereospecific Number (SN).The digestibility,absorption,transport in the blood and metabolism at cellular level of lipids also are different with their Stereospecific Number.In this study,the TAG of some edible oils were purified using a silica column,then were subjected to positional distribution analysis using a modified procedure involving hydrolysis by a 1,3-specific lipase (pancreatic lipase) which cleaves selectively the sn-1 and sn-3 position ester bonds of TAG yielding to 2-monoglycerides (2-MAG) and free fatty acids(FFA).
