　　Irradiation, a physical technique, can sterilize the microorganism in foods.Listeria innocua L83 and Samonella enteritidis 50041 were inoculated in packaged tofu, the effects of irradiation on microbiological controlling, nutrient and sensory qualities of packaged tofu(bean curd) stored at commercial condition were studied.
