Pleurotus ostreatus is widely distributed many countries including in Korea,Japan and China and is also artificially cultivated.It has been loved as food for a long time due to its favorable flavor & texture and demanding was steadily increased due to its beneficial pharmaceutical functions such as antioxidative,anticancer and antitumor.In this research,cultivation of mushroom on substrates containing green tea materials was studied in order to investigate the transfer rate of catechins and caffeine which are well known and very important green tea components.Also,the effects of sugars and acids in green tea component transfer into mushroom were investigated.
