　　Enzymic breakdown of pectin occurs by the action of a pectinase complex,which catalyze the hydrolysis of pectin into sugars.The pectinase complex contains pectinesterase (PE;EC 3.1.1.11) which release the methylester groups from pectin,and depolymerases,such as pectate lyase (EC 4.2.2.2),pectin lyase (PL; EC 4.2.2.10) and polygalacturonase (PG; EC 3.2.1.15).
