The purpose of this study was to investigate the effect of electron beam-irradiation on contents of hydrocarbons from beef.Beef patties were irradiated at 0-20 kGy (0,2.5,5,7.5,10,12.5,15,17.5 and 20 kGy) and the identification of irradiation treatment was investigated by analyzing the characteristics of hydrocarbon.1-Tetradecene (C14∶1),pentadecane (C15∶0),1-hexadecene (C 16∶1),heptadecane (C 17∶0),1,7-hexadecadiene (C16∶2),8-heptadecene (C17∶1),8-heptadecene (C17∶2) and 1,7,10-hexadecatriene (C16∶3) in beef were detected at 2.5 kGy and over.Among the composition of fatty acids in meat,stearic acid and linoleic acid showed the high degradation rate in a-carbon position,Cn-1 hydrocarbons were higher than Cn-2 hydrocarbons.In contrast,Cn-2 hydrocarbons from oleic acid and palmitic acid were higher than Cn-1 hydrocarbons.
