High hydrostatic pressure can be used as a sterilization method by creating the effects of inactivation of microorganisms and enzymes,quality retention,changes in product functionality and modifications of biopolymers.Texture was studied in vacuum-packed purpleback flying squid mantles (Sthenoteuthis oualaniensis) that were pressurised using a pulsed high-pressure processing machine (UHP900-2x2,Ⅱ) at 200,300,400 and 500 MPa for 15 min at temperature of 30,40 and 50℃.Sensory analysis showed that the high-pressure processing of squids mantle does not has an effect on the texture parameter since pressurization at 200,300,400 and 500MPa at ambient temperature (30℃) resembled closely to the fresh material;control with removal of skin,according to the hardness values.
