麻痹性贝类毒素(paralytic shellfish poisoning toxins,PSTs)是存在于贝类等海产品体内、摄食后可产生麻痹作用的一类海洋生物毒素的总称,其化学结构为四氢嘌呤衍生物.PSTs主要由亚历山大藻属、膝沟藻属等海洋甲藻以及一些淡水蓝细菌合成并在食物链中传递.PSTs毒性强,对人类健康造成威胁,因此食品中PSTs的含量受到关注.欧美等国规定可食贝类中PSTs的限量为80 μ g STXeq/100 g贝肉,这一限量目前被大多数国家所采用.目前,美国分析化学家协会(A0AC)推荐采用小鼠毒性分析法及柱前(或后)荧光衍生液相色谱法来定量检测贝类等海产品中的PSTs.
