Two methods for determination of Ethyl Carbamate (EC) content in Chinese rice wine,by SPE-GC/MS and HPLC-FLD,were system optimized and comparatively analyzed in this paper.The result indicated that two methods both could accurately determinate EC content in Chinese rice wine,determinative result are reliable.While we investigated the EC content of Chinese rice wine in all country and researched the impact factors of EC formation in all round process.The research result lays foundation for technical standard of analysis methods and preventative measure.
