鱼类与禽肉类一样均属易腐食品,保管不善极易变质,其速度取决于暴露的环境温度。长期以来,人们采用冷藏方法保持食品质量,调节市场供应;但是,冷藏食品的出现,还不是冷藏链。鱼类冷藏链是指从捕捞、运输、贮藏、销售,以至食用各个环节,不断采用冷藏方法,保持其质量的综合过程。
Fish, like poultry meat, are perishable and misdiagnosed, depending on the ambient temperature of exposure. For a long time, people have adopted the method of refrigeration to maintain the quality of food and regulate the market supply. However, the appearance of frozen foods is not yet a cold chain. Fish cold chain refers to the fishing, transportation, storage, sales, and even edible all aspects of the continuous use of refrigeration methods to maintain its quality of the integrated process.
