High pressure technology is being increasingly used for processing biotechnological materials.During pressure build-up,the work done as a result of volume change is converted into internal energy which manifests itself as temperature increase.In larger high pressure autoclaves,the temperature distribution is non-uniform,and this poses a major challenge in the assessment of food safety.Based on an in-depth thermo-fluid dynamic analysis,a numerical simulation routine was developed for microbial inactivation kinetics,which was validated for high pressure treatment of various biotechnological substances at 500 MPa.
