The application of pulsed electric field (PEF) as a nonthermal liquid food treatment technology has an extensive future with the objective of liquid food pasteurization.The treatment chamber,in which two electrodes held in a position by an insulating material,is one of the key components in the PEF treatment process.The configuration design of treatment chamber is of great importance,because it should provide a relatively spatially uniform electric field in the treatment zone,while avoiding electrical breakdown as far as possible.
