Diet can interfere with immune cell functions both in humans and domestic animals.Recently,molecular approach to nutritional studies carried out in humans or laboratory animals permitted to elucidate that such interference may depend on interaction between nutrients and genome.The nature of that interaction has been established for some fatty acids (FA),amino acids,vitamins,and minerals,which may cause changes in DNA stability,repair,synthesis and in gene expression processes.Another way the interference between diet and immune cells may occur is the ingestion of food mutagens.
