Traditional Chinese medicine has a long history and plays a unique role in the treatment of diseases.But many essential component are heat-sensitive in herbs,if heated,they will be denatured,lose biologic activity,or change into another compound.The extraction of these components is very difficult to achieve with traditional methods.A new extraction technique,Ultra-high hydrostatic pressure extraction (UHPE),which operates at room temperature and is a physical process,the bio-active components from herb can be preserved.The application and the problems of UHPE in herbs were reviewed in this paper.And the countermeasure and prospect was put forward to using UHPE in herbs too.
