The numbers of child-care centers are increasing rapidly in Korea.The systematic management of foodservice operation is not yet well established to control the food safety.This study was aimed to identify microbial hazards in foods and foodservice environments by evaluating the sanitary quality of foodservice operations in child-care centers.Samples from 12 centers in Seoul and Gyeonggi province were collected to assess the microbiological quality of 24 raw materials,20 cooked foods,food-contact surfaces (knives,cutting boards,dish towels and gloves),employees hands and working spaces.
