The chymotrypsin inhibitor activities (CIA) of potato were evaluated by measuring the inhibition of chymotrypsin inhibitor activity using N-benzoyl-L-tyrosine ethyl ester (BTEE) as substrate.To evaluate the extent of inactivation of chymotrypsin inhibitors by heat processing,the Superior potato samples were treated with according to the following cooking methods,moist-heating (5,10,15,20 min at 100℃),pressure cooking (lkg/m2 for 2,3,4,5 min at 121 ℃) and microwave (2,450 MHz with high power of 700W for 2,3,4,5 min),frying (2,3,4 min at 180℃),oven baking (15,30,40 min at 200℃).The IT50 (time required to reach 50% inhibition of CIA) values were decreased by increasing the temperature and time during cooking period.
