Mycotoxins are secondary metabolites of certain fungi belonging to genera such as Aspergillus, Penicillium, or Fusarium.Trichothecenes are a group of these toxins, all characterised by closely related tetracyclic structures.Four members of this group — namely deoxynivalenol (DON), nivalenol (NIV), diacetoxyscirpenol (DAS) and T-2 toxin (T2)-were investigated.All of which are well known natural contaminants of grains and grain products.
