Polyphenol oxidase (PPO) was extracted and assayed from the fresh rhizomes of Canna edulis.The PPO was shown to use catechol,catechin,chlorogenic acid,caffeic acid and gallic acid as substrates as well as its optimum temperature and pH were determined.Then the inhibition effect of Canna edulis peel extracts on the PPO was tested using catechol as substrate,and four potential inhibitors,including citric acid,ascorbic acid,EDTA and the extracts,were optimized by quadratic orthogonal regressive design using DPS V9.5 software program.Finally,total phenol contents and total antioxidant activity were also determined in the presence of the optimized irthibitors obtained at room and retrigerator temperatures.
