Turkish Delight to be discussed in this study represent an important group of gum and jelly type confectionery.Differentiation in ingredients and in the technology of production cause to existence of various types of confectionery.The aim of this study is to review the functionality of ingredients which are used in Turkish Delight production.Main ingredients to produce Turkish Delight are starch,sugar,acid,dry fruit,colorings and flavorings.
