Pulsed electric field (PEF) is a novel non-thermal food processing technology and rectangular pulses are most commonly used for inactivating microorganisms.In this paper,experimental results are gicen and analyzed for the effect and principles of PEF sterilization.Inactivated apple juice is used as supporter of Staphylococcus aureus.To study the sterilization outcome quantitively,classical plate counting method was applied.Electrical system used in the experiments are PEF-3 development by Graduate School at Shenzhen,Tsinghua University.
